APPETIZERS

Savories Swiss Bake

Ingredients
1 pkg. (8 oz.) Cream Cheese
1 cup Gruyere Cheese, Grated
1/2 cup GOOD Mayonnaise
Chopped Green Onion (3-4)
White Pepper to taste

Directions
Mix well and place in baking dish. Top with crushed Ritz Crackers & crumbled bacon Bake in 350 degree oven until bubbly around the edge, about 20 minutes. Serve with BIGS (Wheat Thins)

Kahlua Pecan Brie with Crackers

Ingredients
¾ cup chopped Pecans, toasted
¼ cup Kahlua
3 tablespoons brown sugar
1 brie wheel
Assorted Crackers

Directions
Remove rind from top of brie and place in microwave safe plate. Scatter pecans over brie and press into cheese Combine Kahlua and sugar in saucepan over medium heat and cook 1 minute, stirring to dissolve the sugar. Drizzle over brie and microwave 1-2 minutes, or until soft.

SALADS

Wild Herb's Red Quinoa Salad

Ingredients
1 cup Red Inca Quinoa
2 cups Water
2 Tomatoes, chopped. Drain.
1 1/2 cup Grated Carrot
2 cup Diced Cucumber
1/4 cup chopped Cilantro
2 TBL Lemon Juice
4 Green Onion, shopped
1/2 cup Olive Oil
Salt and Pepper to taste

Directions
Cook Quinoa in water for 15 minutes or until water is absorbed. Drain. Add all other ingredients and chill for 1 hour.

Broccoli Salad

Ingredients
1 head broccoli
6-8 bacon slices, cooked and crumbled
½ cup red onion, chopped
½ cup white raisins
8 oz. sharp white cheddar in small cubes
1 cup mayo, homemade or good quality
2 tablespoons white vinegar or more to taste
¼ cup brown sugar
½ cup grape tomatoes, halved
Salt and pepper

Directions
Blanch broccoli briefly and shock in ice water. Drain and let dry.
To broccoli, add bacon, onion raisins and cheese.
Combine remaining ingredients, mixing well, add to broccoli and toss gently.

Chocolate Truffles

1 1/2 sticks Butter
1 lb. Bittersweet Chocolate, the BEST you can find!
1/2 cup Cream
4 tablespoons liqueur, Kahlua, Chamboard or Grand Marnier

Cocoa Powder for dusting
Chopped Nuts for rolling; Pistachios, Peanuts, Pecans or Pinons

Directions
Cut butter and chocolate into pieces. Bring cream to boil over medium heat.
Add butter and chocolate to cream. Stir until melted.
Add liqueur. Chill mixture for at least 2 hours.

Form into balls.
Roll into cocoa, chopped nuts;
